SBN: Add missing properties, remove not built segments

first (and maybe last) request/question from @MoritzStefaner about the data:
- [ ] the real network data does not have the total_length / total_coverage / total_directness properties. Could you add them?
- [ ] built_in has for the 201 never built segments the String "No" - but it would be clearer to parse if this was just removed. Could you do that? (I can also do this if you can't)

I have uploaded the data here, it can be replaced - but the file names are important, please do no change them: https://github.com/BikeNetKit/dataexport/tree/main/dataexports/latest/sortbikenet

Start by inspecting the uploaded data in dataexports/latest/sortbikenet and compare the real network data with the requested properties. Preserve all existing file names, add total_length, total_coverage, and total_directness, and remove the "No" values from built_in for the 201 never-built segments; done means the updated data is available in that location.
