Description

We should log the schema and describe what columns are being kept and which are being projected out in the projection API.

This will be useful for users wondering why some of their columns are missing.

Research direction

Start by reading the projection API and tracing where projected columns are selected and the schema is available. Done means the projection path logs the schema and clearly identifies which columns are retained and which are projected out, with behavior verified by the relevant existing tests.
