Switch Anaconda install to something else?

Think we should move away from using anaconda. Think we can still use conda environments but maybe a different installer and default channel.

@tobyhodges I know you had been looking at this from the task force and the thread in slack a while back. Any suggestions on what we might use? I'd be happy to try it out at my Nov workshop and report back to the task force.
