Switch Anaconda install to something else?

Think we should move away from using anaconda. Think we can still use conda environments but maybe a different installer and default channel.

@tobyhodges I know you had been looking at this from the task force and the thread in slack a while back. Any suggestions on what we might use? I'd be happy to try it out at my Nov workshop and report back to the task force.

The issue names no files, tests, or entry points, and it does not select an installer or default channel. First review the lesson's current Anaconda installation guidance, then identify and agree on a replacement before changing the documented setup and validating it at a workshop.
