fails to compile on systems with GCC newer than 12.x

`uvx terminal-bench run --help` includes pyiceberg as a dependency and fails to build on Bazzite Linux which comes with GCC 15 instead of GCC 12 (both /usr/bin/gcc and /home/linuxbrew/.linuxbrew/bin/gcc are 15.x)

it seems that this project or perhaps something it itself depends upon has a hardcoded assumption about `gcc-12`

Start by reproducing the failure with `uvx terminal-bench run --help` on Bazzite Linux, using the GCC 15 environment described in the issue. Trace which PyIceberg or dependency build configuration assumes `gcc-12`, using terminal-bench issue 1431 for context; done means the package builds successfully with GCC newer than 12.
