Downgrade Colima Version

### Description

Colima 0.6.2 introduced breaking changes to my local setup (Apple Silicon >= 14, Sonoma). Still looking for the root issue.

In the meantime, how can I downgrade to 0.5.6?

`brew install colima@0.5.6` does not work for me.

I've tried installing from the [old formula](https://raw.githubusercontent.com/Homebrew/homebrew-core/a5a6c00b17225403caf8e91bde24f9fa44e71d52/Formula/c/colima.rb) but I get the following error when I run `brew services start colima`

`Error: Formula colima has not implemented #plist, #service or installed a locatable service file`

Any help would be appreciated
