I would be really useful being able to use the CopilotClient as an [IChatClient](https://learn.microsoft.com/en-us/dotnet/ai/ichatclient)
similar to:
- Google https://github.com/googleapis/dotnet-genai/pull/81
- Anthropics - https://github.com/anthropics/anthropic-sdk-csharp/pull/10
- Mistral - https://github.com/tghamm/Mistral.SDK/pull/6
- OpenAI - https://www.nuget.org/packages/Microsoft.Extensions.AI.OpenAI
