Add E2E test for openai instrumentation

We want to add an E2E test using a real openai key to test that the instrumentation really works.

Also test latest version to ensure we notice breakage.

Start by locating the existing OpenAI instrumentation and E2E test setup, then check how credentials and dependency versions are handled. Add coverage using a real OpenAI key and the latest version, and verify that the test detects instrumentation breakage.
