Update deployment documentation

right now the `eoapi-cdk` part refers to the deployment of the custom runtimes hosted in the eoAPI repo but I think we should talk about the stack hosted in eoapi-template

Open https://eoapi.dev/deployment/ and inspect the eoapi-cdk section. Compare its description with the deployment stack hosted in eoapi-template, then update the documentation to describe the intended stack rather than the custom runtimes hosted in eoAPI. Done means the deployment page accurately reflects eoapi-template.
