Release v27.2.0 demo (w/c 18/1/27)

As developers we want to demo the new features of IBEX v15.0.0 to relevant instruments.

## Acceptance criteria
- [ ] Demo slides created
- [ ] Demo teams allocated to appropriate groups
- [ ] Demos with relevant groups organised
- [ ] Demos with relevant groups done

## Notes
- Any other items in the meeting do not need to be recorded
- There should be a slide deck that can also be shared

Start with the linked Timetable for Instrument Demos wiki page and review the acceptance criteria. Done means the demo slides are created and shareable, teams are allocated, and demos with the relevant groups are organised and completed.
