Improve URCPP application duration display

説明

There are two fixes we would like to make to the URCPP duration display.

- Change the date format of start and end dates to include the full day, e.g., "Monday", "Saturday"
- Add a datepicker to End Date

This page can be reached by starting an application from the URCPP main page. The route is `/create`
