Fetch OP Stack chains using Superchain Registry

### Overview

Since OP Stack chains share a lot of code, the Optimism plugin should allow us to define multiple ecosystems and networks using the [Superchain Registry](https://github.com/ethereum-optimism/superchain-registry)

### Specification

Bundle a copy of the registry with this package.
Create OP stack ecosystems for all the networks found in the registry.
