Add S3 Object Store, Anthropic, and Discourse to the connectors Providers table

Description
Background
The ## Providers table in src/content/docs/concepts/connectors.mdx lists GitHub, OpenRouter, and Custom API. The dashboard Add connection picker offers more than that.
The picker shows whatever the sprites-api provider catalog returns. Only two filters apply to that list:
- sprites-api hides Ollama unless the
sprites-ollama-connectorsflag is on for the org (default off). - ui-ex hides Slack as User and Slack as Bot behind
sprites-slack-connectors(tracked in #220).
Every other provider in the catalog is offered with no flag. Three of them are missing from the docs.
Missing from the Providers table

S3 Object Store and Anthropic came after the page was first written (#177, May 12), so these gaps predate #219.
Before documenting Discourse
Discourse has no flag and is on main in both repos, but it's not yet confirmed that the build running in prod includes it. Check that it appears in the Add connection picker before adding the row.
Out of scope
- Ollama: leave it out until
sprites-ollama-connectorsis generally enabled in prod, same rule as Slack in #220. - Slack: covered by #220.
- Fly.io Machines tile: the picker also shows this, but it's a pre-filled Custom API connector pointed at
api.machines.dev, not a separate provider. Mentioning it under Custom API is optional.
