Description
We don't really need to demonstrate GPU rendering in this repo. Usage of Parley with `vello` or `vello_cpu` is essentially the same. And it would help with CI times if we could standardise on `vello_cpu` and eliminate the `vello` and `wgpu` dependency trees.

Research direction
Start by inspecting the Parley workspace dependency configuration and the CI setup to find where vello and wgpu enter the dependency tree. Standardize the workspace on vello_cpu, remove the unnecessary vello and wgpu dependencies, and verify that the workspace still builds and CI no longer pulls those trees.
