According to https://anhhoangduc.com/post/writing-a-book-with-bookdown-in-foreign-languages/ we should be able to update https://github.com/ioos/bio_data_guide/blob/main/bio-data-guide/preamble.tex with
\usepackage{booktabs}
\usepackage[utf8]{inputenc}
\usepackage[spanish]{babel}
and all will be good? 😜
