Align e2e testing relay mock servers

### Description

There's currently multiple things in use when it comes to asserting envelopes make it out of the SDK and into relay.

We have:

We should consider merging these.

Note: These might also be in use on other repos, e.g. SAGP

比較 issue 中提到的三個 relay 和 envelope 測試伺服器實作：PR diff、test/system-test-sentry-server.py，以及 sentry-android-integration-tests/sentry-uitest-android/src/androidTest/java/io/sentry/uitest/android/mockservers/MockRelay.kt。在選擇共用方案之前，檢查 SAGP 或其他 repository 是否使用了它們。完成的標準是，e2e assertions 在受影響的各個 consumer 之間使用行為一致的 mock-server。
