Writing custom select queries

Hello. I was wondering if it is possible to modify the pre-written query, to omit redundant table columns and such.
Is this possible, or something similar like modifying the data in queries to avoid later data handling.

If this is the wrong place to ask, then please let me know. I am a bit unsure.
