By setting the [`server_name`](https://github.com/envoyproxy/envoy/blob/be410d6121fefb2d57468261180aa354fb8020b5/api/envoy/extensions/filters/network/http_connection_manager/v3/http_connection_manager.proto#L465C1-L468C87) field, add gateway specific response headers. We can set the default value of `server_name` to `"envoy-gateway"` or other. 😄
