Update conversations when user has seen conversation

# Problem

When a user has read the conversation, we need to be able to update the conversation's `read_at` time to reflect that:

- the conversation has been read
- any unread conversation parts have been read

As a side note, I'm wondering if we're better off renaming `read_at` to `seen_at` to be more intention-revealing.
