Model Monitor on Batch Tansform

Model monitoring for batch transformers behaving the same as normal endpoints.

Adding a data capture config to the transformer: https://sagemaker.readthedocs.io/en/stable/api/inference/transformer.html?highlight=transformer
**Describe alternatives you've considered**
Using only endpoints, end multiple endpoints where necessary. We are currently having a look at ML flow tracking: https://www.mlflow.org/docs/latest/tracking.html
