Add the ability to support more models (local/other cloud hosted models)

I love how Amazon Q CLI now allows you to switch between different models. This is a great start.

As a big user of other AI Coding Tools, one of the stand out features they have is the ability to switch to 1/ other hosted models, 2/ local models via ollama/LM studio.

With SLMs improving and gaining traction, it would be great to offer the ability to select other models beyond the current Claude models.
