[Docs]: Example docker-compose file causes git timeouts on Windows

### Problem Statement

As detailed in https://github.com/appsmithorg/appsmith/issues/35644 there are performance issues with the git integration when running via docker on Windows that can be resolved by a small tweak to the docker-compose.yml file used to create the appsmith container.
