Define theme `surface`/`container` colors
We've moved to Mateiral3 themes a long time ago, but never defined some colors like the many `surface` and `container` variants ([source](https://m3.material.io/styles/color/system/how-the-system-works#901b68c1-8580-462c-9bae-44ba5c15f937)). The ones that are currently defined are mostly hacks to avoid breaking some UI components.
For example, MaterialAlertDialogs look like this right now:
