Research and setup code coverage tool for our community projects

## Description

Research code coverage report tool to apply to one of our projects and then set up at least one project with that (e.g.: perhaps [mentorship backend](https://github.com/anitab-org/mentorship-backend) 🙃 )

For the research have into account the existing tech stack projects in the community (e.g.: kotlin, python, java, ..).
