source-castor-edc: add progress streams, study filtering, and handle hidden fields

This issue tracks the enhancements and fixes for the Castor EDC source connector:

- Added study_participant_progress and study_participant_progress_forms streams.
- Added optional study_id configuration property to limit syncs to a specific study.
- Added a record_filter on the study stream matching the configured study_id.
- Widened progress and randomization_group field types to string/null to handle 'Hidden' values on blinded records.
- Configured 404 responses to be IGNORE'd instead of failing the sync (handles empty repeating data instances).
- Handled rate-limiting using the custom X-RateLimit-Retry-After header.
