Docs: Add a warning that some of our dependencies may not yet support Python 3.12 on all operating systems

A user ran into this issue, specifically on the Python `3.12-slim` docker image.

> This is while using the docker hub python:3.12-slim tag. With python:3.11-slim it is working correctly.
