Allow using custom redis, database etc with docker compose

According to the docs, the preferred way to deploy scancodeio is via docker compose and yet it doesn't mention how to connect it to remote production database or redis server. IMHO, some instructions to configure these should be documented. (Maybe something like https://docs.dependencytrack.org/getting-started/database-support/).
