go-template functions aren't documented

We built a lot of convenience functions like `toLowerSnakeCase`, but never documented them in the README.

Find the go-template functions in the codebase, likely in a helper or template package. List each function with a brief description of what it does. Update the README file to include this new documentation section. Verify the changes by checking the README renders correctly.
