Make binning and scaling work on multiple columns

Description
Currently the transformations in `numeric/binning.jl` and `numeric/scaling.jl` only work on single columns.
They should be able to be applied to multiple columns (ie `Matrix` or `DataFrame`) at once and the `struct`s should be able to handle that.
