Description
While watching the GeoIPS workshop today there are a couple steps of "open this file and change the name to your packages name". I can see this as being a good way to get users up and running in making changes, but it could also be tedious. Structuring this template as something like a cookiecutter template:
https://cookiecutter.readthedocs.io/en/stable/
would allow users to run a single startup command and get the rendered output with little "boilerplate" changes.

Research direction
Start by reviewing the repository's template structure and the Cookiecutter documentation linked in the issue. Identify which package-name changes are currently manual and define what a single startup command should generate; no specific files or tests are named.
