Race and ethnicity ontologies

We need a controlled vocabulary for race and ethnicity for human data. This could be something we create based on the values that are being used by immunology team, but it would be nice to use an existing ontology.

This space feels rife with issues, so we should be careful in what we select. The EO ontology seems off to me. CRENO feels a bit strange as well. I'll keep looking, but I think we need someone with more direct experience using race/ethnicity data to weigh in.
