Consider adding a way to fix session when running the wrong animal

This is a can of worms to do at the rig. But it should minimally:

- fix session_input.json and session_output.json `subject`
- fix metadata

Edge cases:
- People click transfer data and only realize there is an error afterward. This is bound to be a disaster since we do not know which state the copy process is in (robocopy, watchdog, etc.).
- What to do with curriculum? Seems super hard to decide because running a curriculum on a 10minute session is likely not what people want
