get rid of html in markdown

## What needs to happen?

Get rid of `gatsby-transformer-remark-frontmatter` and convert html in markdown to strings, etc.

## Why should we do this?

`gatsby-transformer-remark-frontmatter` isn't compatible with our version of gatsby

## When does this need to get done?
not causing an issue currently, but good to do eventually
