Test the codebase with MongoDB 7.0 and look for bugs

## Background Information
With new partnerships we are building, we will support the installation of Aletheia in a bare metal environment. Most likely these fresh environments will use latest Ubuntu/Debian and it means the suggested MongoDB version is 7.0.

## What
We need to test the codebase against the version and potentially add a CI pass to make sure we are on track on supporting the right verisions

## Acceptance Criteria
- [ ] Manual testing of the codebase with MongoDB 7.0
- [ ] Test multiple DB versions in CI including current production cluster and 7.0
