coral: update `preview` to use different mode

# What happened?

`preview` uses the remote-api mode, but that does not reflect the build 1:1 (for example, feature flags are true here)

We probably want to have better options to run a proper preview of the _build_ (still need to be able to auth), maybe flexible with local / remote api. Maybe a flag for feature-flags could also be nice.
