Documentation page is not always rebuilt and published

[The documentation build & publish workflow](https://github.com/AbsaOSS/cps-shared-ui/actions/workflows/publish-documentation.yml) is not triggered every time it should be. For example, if you change only something in the `projects/cps-ui-kit/assets/icons.svg` file, the workflow is not triggered.

It might be enough to just replace: https://github.com/AbsaOSS/cps-shared-ui/blob/0dcf728311735ae0eaa60867fa0173187fde4d63/.github/workflows/publish-documentation.yml#L12 with ` - 'projects/cps-ui-kit/**'` but it requires further investigation.
