Review GStreamer as a potential encoder

Today we use FFmpeg (via the `ffmpeg-next` Rust crate).

GStreamer is another option that has Rusty APIs. Is it a better or worthwhile tool to to implement? Will it benefit us?

This issue is low priority.

Look at the current FFmpeg integration via the `ffmpeg-next` crate in the codebase. Research the GStreamer Rust bindings (gstreamer-rs) and compare API stability, performance, and licensing. Evaluate if switching encoders would benefit the virtual display utility's specific needs for screen capture and encoding. A proof-of-concept branch implementing a basic GStreamer encoder would demonstrate feasibility.
