Optimize file watchers to prevent ENOSPC errors

## Problem
Getting ENOSPC (Error NO SPaCe) errors due to too many file watchers being consumed by Neovim plugins.

## Analysis Results
Major file watcher consumers identified:
- LSP servers (Volar, typescript-tools.nvim)
- Git plugins (gitsigns.nvim, diffview.nvim with watch_index=true)
- File explorer (Snacks.nvim picker.explorer)
- Auto-refresh features (Codelens refresh on TextChanged)
