Refactor: Move lazyvim-config.lua content to lazy.lua or options.lua

## Issue

The file `lua/plugins/lazyvim-config.lua` contains minimal configuration that could be better organized in more appropriate locations.

## Current Content

## Proposed Refactoring

This LSP keymap override could be moved to either:

1. **`lazy.lua`** - If it's a global plugin configuration override
2. **`options.lua`** - If it's a general editor setting/keymap configuration
3. **`lua/plugins/lsp.lua`** - Since it's LSP-specific configuration

## Benefits

- Reduces unnecessary plugin files
- Better organization of configuration
- Consolidates related settings
- Cleaner project structure

## Files Affected

- Remove: `lua/plugins/lazyvim-config.lua`
- Modify: Target file for the configuration

## Priority

Low - organizational improvement, no functional impact
