is it possible to use multiple adapters at the same time? e.g: Have a Product schema in Postgres while User sits in Mongo? If yes, do relationships still work in this scenario?

Check the jugglingdb source for adapter configuration and relation handling. Look at how schemas are defined and connected to different adapters. Test if cross-adapter relations are currently supported by examining the relation code. Determine what changes would be needed to support polyglot persistence with relations.
