Update helpers documentation

**Feature request**
It would be great to have sorting for handlers.

**Use case**
Many users need this functionality for production deployments.

**Implementation idea**
Add a new config option `enable_sorting` with default `false`.

Start by locating the helpers documentation, handler configuration, and existing config parsing for the proposed `enable_sorting` option. Check how handlers are currently ordered and where defaults are defined. Done means the option defaults to `false`, enables handler sorting when set, and the helpers documentation describes the behavior.
