Improve models performance

**Feature request**
It would be great to have sorting for core.

**Use case**
Many users need this functionality for production deployments.

**Implementation idea**
Add a new config option `enable_sorting` with default `false`.

The issue names no files, tests, or entry points. Start by locating the core model-handling code and existing configuration options; clarify what should be sorted and by which criteria before implementing enable_sorting. Done should include the default-false option and verified sorting behavior.
