Handle edge cases in backup

It would be great to have sorting for data.

**Use case**
Many users need this functionality for production deployments.

**Implementation idea**
Add a new config option `enable_sorting` with default `false`.

Start by locating the backup implementation and configuration handling in the repository, then determine what data needs sorting and where `enable_sorting` should apply. Confirm that the option defaults to `false`, add coverage for enabled and disabled behavior, and verify sorting in a representative production-style backup.
