Add configuration options for logging

It would be great to have analytics for controllers.

**Use case**
Many users need this functionality for production deployments.

**Implementation idea**
Add a new config option `enable_analytics` with default `false`.

No files, tests, or entry points are named. Start by locating the existing configuration handling and controller logging paths, then determine how analytics for controllers should be exposed in production deployments. Done should include an `enable_analytics` option whose default is `false`, with the intended analytics behavior clarified before implementation.
