Update controllers documentation

**Feature request**
It would be great to have logging for services.

**Use case**
Many users need this functionality for production deployments.

**Implementation idea**
Add a new config option `enable_logging` with default `false`.

First locate the controller and service configuration paths and any existing logging behavior, then clarify which services, messages, and configuration documentation are in scope. Done should include an agreed logging behavior and an `enable_logging` option whose default is `false`.
