Research direction

Start by reviewing the grid-distance implementation in cmip6_preprocessing/grids.py and the EarthCube example notebook linked in the issue. Clarify whether metric reconstruction belongs in cf-xarray or xgcm, then define support for CF bounds and vertices/vertex-points and examples showing the resulting grid metrics.

Description

@dcherian just made me aware of this package and it looks super cool (have only skimmed the exmpamples so far).
I noticed in the last example that you are recreating a (simplified) grid cell area. I have recently added the ability to estimate grid distances from cf type 'bounds' (two bounding values per logical axis) and verticies/vertex-points (4 bounding points representing cell corners).

This enables us to recreate grid metrics for many CMIP6 models and then use xgcm (my upcoming earthcube presentation gives some examples.

I think that this sort of functionality is probably of use to a broader community than 'just' CMIP6 users. Originally I was planning to suggest implementing the 'recalculation' of metrics upstream in xgcm, but when I saw this package, I thought perhaps it would make sense to add it here?

Just wanted to quickly drop this here and see if there is interest and also to avoid possible duplication of efforts here and over at xgcm.
