Description

Originally by @manolo

Since multi-sort in the grid needs to press the shift key, it's impossible to use the feature in mobile devices.

I would suggest a solution based on 3 states. For reference take a look to this issue in vaadin-grid https://github.com/vaadin/vaadin-grid/issues/431

Research direction

Start by reviewing the grid's existing multi-column sorting behavior and the referenced vaadin-grid issue #431, focusing on how touch input currently depends on the Shift key. Define the three sorting states and verify that multi-column sorting can be operated on touch devices without Shift while preserving existing desktop behavior.
