Description
Describe the solution you'd like
Our admin-tools and other official images should use the new pre-release CLI branch once it has a release rather than cli v0.11.0
Additional context
We discussed this briefly in https://github.com/temporalio/docker-builds/pull/190

Research direction
Start with the admin-tools and official image build definitions, then review docker-builds/pull/190 and the current cli v0.11.0 reference. Confirm the CLI rewrite branch has a release before updating the image builds; done means those images build with the released rewrite CLI rather than v0.11.0.
