Description

The docs currently only provide an all-access OPA config with the explicit remark to not use it in production.

As far as I can tell, the possible policies are not documented anywhere. As a user, I would like to have a How-To Guide on how I can configure Trino authorization to fit my organization.

Research direction

Start by reviewing the existing documentation for the all-access OPA configuration and the Trino authorization setup referenced by the issue. Identify the available policy options and document how users can configure authorization for their organizations; done means the production-ready How-To Guide covers those policies without recommending the all-access configuration.
