Description

If we want to keep this usable outside of stackable (like how we make the vendor_version a String) We could make this a configurable list of skipped tags (or tag prefixes/suffixes).

That isn't urgent, so it could be done in a future PR.

Research direction

The issue does not name files, tests, or an entry point. Start by locating the existing handling of floating and skipped tags in the Docker image definitions, then review how vendor_version is made configurable. Done means the skipped tags or tag prefixes/suffixes can be configured for uses outside Stackable, with coverage for the resulting behavior.
